The Perfect Pet


Well as you all know... I have been wanting another pet. (See this Post) I have asked for everything from a cat to a hippo. So this morning I went out and got the Perfect Pet. A Zhu Zhu Pet!

I have been wanting one of these for a month now and I refused to pay $60.00 on EBAY for a motorized Hamster. But I rushed to Toys R Us this morning (at 7 am) and am now the proud new owner of the Hottest Holiday Toy of 2009.

I can't wait to see how Otis reacts to his new buddy- Hopefully he doesn't eat it!

A little Treat....

These are light and fluffy pumpkin pancakes made extra orange with food coloring and decorated for Halloween breakfast using cinnamon syrup that has been colored a dark black.

The recipe comes from Noble Pig, whom I'd like to thank for being bold enough to put a whole stick of butter into the batter. They need to cook a little longer than my usual pancakes and I found they needed a slightly lower heat than I'd normally use or they'd burn before the proper amount of bubbles came to the surface.

I added twice the cinnamon to the syrup and cooked it a little longer to make sure it would be thick enough to pipe. When I took it off the heat my syrup read 213 degrees, just barely over boiling.


Pumpkin Pancakes with Cinnamon Syrup

(Recipe from Noble Pig.com, with a few small changes by Not Martha.org.)

Very Orange Spiced Pumpkin Pancakes

  • 1 cup all-purpose flour
  • 1/2 cup granulated white sugar
  • 1-3/4 teaspoons baking powder
  • 1 egg, separated
  • 3/4 cup milk
  • 1/2 cup pumpkin puree
  • 1/2 cup butter, melted (1 stick)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • orange food coloring gel

In a large bowl, flour, sugar, baking powder, cinnamon, nutmeg and ginger.

In a medium bowl, lightly beat egg yolk with a fork. Add milk, pumpkin puree and vanilla; mix well. Add melted butter. If the butter is hot, add it slowly or you will cook your egg yolk. Add a bit of the orange food coloring to the wet mixture at this point. Add more until it's about as orange as you can stand. Stir this mixture into dry ingredients, just until combined.

In another bowl, beat egg white until stiff peaks form. Gently fold egg white into batter.

Heat a griddle or large skillet over medium heat and grease lightly with vegetable oil. For each pancake, spoon about 1/4 cup batter onto the hot griddle. Cook until bubbles appear on the surface and the edges look dry. Turn over and cook until golden brown. The pancakes are delicate so stick to making small or medium sized pancakes, I put cracks in a few larger ones trying to flip them over.

Black Cinnamon Syrup

  • 1/2 cup granulated white sugar
  • 1/2 brown sugar
  • 2 Tablespoons all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • 1 cup water
  • black food coloring gel

In a saucepan combine white sugar, brown sugar, all-purpose flour and cinnamon. Stir dry ingredients together. Add vanilla extract and water. Bring to a boil, stirring occasionally. Be really careful while boiling sugar, keep a bowl of ice water nearby just in case. As it heats squirt in a little of the black food coloring and mix in, add more until it's as dark as can be (it doesn't take much). Allow to boil for a few moments until the mixture has noticeably thickened. Remove from heat and allow to cool enough to put into a squirt bottle (of the ketchup style). You can make it the night before and warm it by dipping the squeeze bottle in a bowl of warm water. You might also have your pancake eaters create their own designs.

Decorate the pancakes with the syrup. By all means decorate the plate with extra syrup. I find spiders, spider webs and bats work out well. Serve with sausages, sausages are creepy looking enough on their own.

I Phone Blues






























I am having MAJOR I phone issues. My wi-fi connection has been non-existent for 2 weeks. I have called and called and no answers. They tell me to go to Starbucks and try to connect... nothing. I have turned my phone on and off and on and off. I have reset my network settings a million times. This is getting old. Has anyone else been through this with their I Phone? HELP!

Ring-A-Ding

Well my ring returned safely to my finger last night around 8:25 pm. Boy was I relieved and it looks better than ever. After reading everyone's comments (especially about their engagement rings) I think I have just scared myself even more! But I'll cross that bridge when I get to it.

Today is a VERY special day in Kentucky. It is Big Blue Madness! Finally, the start of Kentucky Basketball. It seems like Coach Cal has been here forever but tonight is the first night we will see him on the floor of Rupp. I am just giddy. It will be so fun to be surrounded by thousands of other Wildcat fans and start the season out with a Bang! Only 5 1/2 more hours!!!

I'm Back!


After a long Blog Vacation and much nagging from my family .... I'm Back!

Last night I was chatting with Michael and all of a sudden I looked down at my pearl ring and the pearl feel off my ring setting. Needless to say I freaked out. My precious ring (that I treat like that other REALLY important ring that I have yet to receive) just fell apart. I almost cried. All day I have felt naked without it on my finger. I called the jeweler and they said they should be able to fix it. (Shewww)

I can't imagine how much anxiety I am going to have over the more sparkley ring in my future! Have any of you lost a stone off your ring or had to have your ring repaired?

Wish List

Here is my animal wish list. I am putting in an advance order to Santa Clause.

(Otis, if you are reading this- I love you buddy. I would never want to replace you or hurt your feelings. You might get a long with some of these better than others. I am sure Santa will take that into consideration.)

If you are wondering who Otis is -Scroll down and see his picture on the right. He's awesome.


First up we have a Morkie. A Maltese and Yorkie mix. Look how sweet that face is. But this little pup might not be able to hang with a German Shepard.
(Cue Michael Jackson's "Wanna be starting somethin")

Next is a beautiful Persian Cat. Something I have longed for since I was a child. This would be a high maintenance commitment! But if I got cold in the winter I could use him as an extra blanket. Also concerned that hairballs would be the death of us all.
Ah the Mini Horse. I have been asking for one since Easter. Michael and I were on the way to my grandparents and we drove past the cutest little one. I was obsessed immediately and started picking out names. This little horse would be perfect as a companion for Otis- Same size same color. I can just see them frolicking in the back yard.

If this little piggy doesn't warm
your heart I don't think anything could. I mean just look at this guy- He has on RAIN BOOTS. He could play in the mud all day and then slip his boots off when he came in. Not really seeing an issue with this one minus the "after they go to the bathroom" smell.













A Ducky- Come on! How hard would this be to take care of? He could hang out in the sink or bath tub all day and would be a hit at the lake. Speaking of the lake I try to catch one every
weekend but our friends make too much noise and scare them off. Can't you just see this duck riding around on Otis' back- Quack Quack!

And finally- Mr. Hippo. I couldn't even get the words out of my mouth before Michael nixed this idea. He said "Britt, did you know that Hippos kill more people than alligators do each year?!" In which I replied- " I guess that's why they named that game Hungry Hungry Hippos". I think space might be an issue here.















Overall - I think I shall be faithful to Otis. I love him- couldn't ask for a better dog BUT if one of these animals came wondering into the house I wouldn't turn them away :o)

This weekend I went to my best friend's Bridal Shower and Bachelorette Party in Louisville. We all had such a great time and I got to see so many of my long lost sorority sisters. Perfect 10

I was tagged by The Company She Keeps to tell you 10 "Unknown" things about me- Here Goes Nothing...

1. I like to tie a ribbon on the handle of my scissors. Not that I think anyone will come into my office and borrow them and not return them but I think scissors are more friendly with a pink bow tied to them.

2. I've been having a lot of nightmares lately and waking up at 3am. I remember most of my dreams and spend half of the next morning trying to decipher them.

3. I still live on a college budget. Even though I have graduated and have a great job- I still don't like spending money. I get upset when I leave Kroger with $80.00 of groceries in my cart. I act like I won't have any money for the rest of the month. I guess it is a good thing to hoard your money ( right dad?)

4. I am scared of the dark.

5. We have a ghost in the house. Doors shut, radios change stations, strange noises are common. This does not make #4 any easier to deal with.

6. I am the happiest I have ever been in my life. I do miss Mom and Dad and will somehow convince them to move to Lexington so I can see them everyday.

7. I wish I could make desserts every night. But if I did- we would eat them every night.

8. I am excited for what is to come in my life but have also learned to enjoy each day. One day I will look back at this moment and wish I could relive it- so each day is appreciated for what it is- Good, Bad or Ugly.

9. I am so happy that I have found such an awesome guy to share all my failures and successes with. Couldn't ask for any better.

10. One day I am going to change some one's life for the better. A great random act of kindness- I don't know when or how but I will do it.

As Seen on TV Review

As requested by many of you- Here is my review of "As seen on TV" products....

The Ped Egg
BBB $9.99

This item was my first guilty pleasure that I picked up at Bed Bath and Beyond. I was really excited about getting this but creeped out by the "foot shavings" that the device held as you used it. On the commercial the lady is emptying the egg out and TONS of skin falls into the trash can. Well this scenario is Not REAL- unless you give the entire state of Vermont a Pedicure.

I think is it an ok product that would work if you had a lot of dead skin on your feet. Once you get the layer of dead skin off this tool is helpful in maintaining your smooth feet.

I tortured M the other night by holding him down and using the Ped Egg on him. With a look of fear in his eyes he asked "Um Britt- why are you running a cheese grater up and down my foot?"
Needless to say- He wasn't impressed.

As a side note they do have a Ped Egg for Men out now. It is the same idea but I guess it's "Heavy Duty" and comes in Black.


Bump It!

This was one I was most excited for. I am quite lucky to have hair that will poof in the back but I thought that this might give me the extra umph that I wanted. It is quite tricky to fool with. It will take you a few tries, a good rat tail comb and hair spray to make you happy with this product. I like it best used when you are wearing your hair up in a pony tail. It would be great for a Halloween Costume if you were going as a Disco Girl or a Hippie.

Now I must say I was NOT going to buy this product. Every time the commercial came on M would say "Hmmm, I wonder if that really works. Britt you should really try that." Implying that my legs are not smooth because I constantly FREEZE and then... well you know the rest of the story. So I was in BBB (surprise) and I said- What the Heck? I'll try it. So I got to the car, opened the box and immediately started smoothing away all my stubble. My legs felt great but I had already shaved that day. Just like the Ped Egg I think this product is good to maintain or touch up throughout the day. I think one of the worst things in the world is to get out of the shower, step on a cold floor and immediately feel your leg hair growing back!! This will help!
( Side note: sorry to all the guys reading this right now- probably a little too much information.)

So of course M wanted to play with the new toy too and tried to rub the hair off of his hand (silly boy) but luckily it didn't work. Which makes their statement of "NEVER having to shave again" WRONG. But I do like it and will carry it in my purse or bag at the lake just to touch up.

Oh wow the Mighty Mendit. Now I have only used this one time so far but I love it. I actually hemmed a pair of jeans with this product. I am 5'3 and can rarely find jeans that aren't too long. Well have no fear my petite friends, Mighty Mendit is here to help. I really think this is worth the $9.99. I am hoping something will break so I can use it again. Also you get a free bottle of Might Gem-it and Gems with your purchase. So if your little one likes to sparkle she can have fun too.
Lint Wizard
"As Seen on TV" store - $14.99

This is the BEST thing I have ever bought in my Life!! I am obsessed with being Lint-Free. I took a $14.99 gamble on this little baby and it was worth. The one I purchased came with a free travel size and I keep in my desk at the office. With a German Shepard running around and my obsession with wearing black I have used this to death.

Well Hello Kenny...

I had the greatest weekend courtesy of M.  What a great guy :o) 

Saturday I got to sit front row at the Sun City Carnival Tour and MEET Lady Antebellum!!!

It was awesome! M decided to stay with the "boys" at the lake so I brought my partner in crime Ashley along with me.  

We got to Louisville at 1:30pm and didn't leave until 10:30pm that night.  It was an all day event to say the least!
